Slow-Cooked Cochon de Lait - This is always a favorite at Jazz Fest. The tender Pork melts in your mouth, and the tangy Coleslaw and Creole Mayo are the perfect complements.

Spicy Andouille - Cajun spiced Sausage paired with grilled Sweet Vidalia Onions, and tangy Bar-B-Que Sauce.

Abita Braised Short Ribs - Famous beer braised Angus Beef, with Fried Onion Rings, Garlic Mayonnaise, Arugula, and Tomato.

Chicken Livers and Slaw - Lightly Floured and Fried Chicken Livers, Creole Coleslaw, and Coleslaw Vinaigrette/

Fried Blackened Catfish with Spicy Remoulade Sauce - New Orleans Classic and Mardi Gras favorite, with fresh Greens, Tomato, Pickle, and Cajun Mayonnaise.

Oyster - Our Battered deep-fried Oysters, with Spicy Remoulade Sauce, plain or dressed.
